The Ancient Watermill at Pagliericcio

This is where we buy our organic stone ground flour for the La Massa bread.

The mill is literally a 7 minute drive away.  Go out of the la Massa gates and down the road over the old bridge and up  to the main road.  Turn left and drive for a about 500 metres and you will come to the old village of Pagliericcio.  Turn right and proceed through the  village, past the church on the left.  Continue for a few hundred metres and you will see a fork on the road to the left.  take this and you will arrive at Griffoni Mill.  Go in, you will be welcomed and you will see the ancient water-driven mechanism which still works today.  They will probably be grinding flour and this ios how it has been done for centuries.

There is now need to buy anything, but you may want a souvenir of some maise flour for polenta or perhaps some organic chick peas or farro (try the minestra di farro recipe in the recipe section).

Interestingly, they produce and pack chestnut flour for Sainsburys which is one the the most important supermarket groups in the United Kingdom.
